Winemaker's comment
Bright yellow wine. Fruity aromas like apple on the nose. On the palate, it presents balanced acidity, with mineral, fruity and elegant notes.
Wine Production
The grapes are picked by hand, taking special care to not break or crush the fruit when transported from the field. The entire bunch of grapes is then pressed to achieve a soft extraction without adding too many phenolic compounds. The juice is then fermented at low temperatures, between 12-14°C, for 15 to 30 days, making sure to maintain the freshness and typicity of the grape.

Pairing
Pairs well with white meats, especially chicken and fish, like salmon. It also goes very well with meats served with cream sauces, or curry-based dishes.

Winemaker's comment
This Pinot Grigio is clean and bright greenish-yellow in color, with fresh fruity aromas on the nose recalling pears and apples. The palate presents well-balanced acidity with a mineral touch. Fruity and elegant.
Climate & Soils
The climate in the central zone is Mediterranean with a broad difference between daytime and nighttime temperatures, summer highs above 30ºC, and an average humidity of 55–60%. The temperatures are lower in the sectors closest to the Andes, due to the cold mountain air. The daily temperatures oscillation is lower in the sectors closest to the Coastal Mountains due to the maritime influence. A selection of vineyards planted on silty soils with excellent drainage near the Andes has been carefully combined with vineyards close to the Coastal Mountains with heavier silt and clay soils.
Vinification
The grapes were gently harvested to avoid extreme maceration and they are pressed whole cluster to extract as lower phenols as possible. The juice is fermented clean and with cold temperatures, between 12-14°C, during a period of 15 to 30 days, to ensure maximum typicity and freshness.
Suggested Food Pairings
Ideal with white meats, especially chicken and fish such as salmon. It also pairs very well with meats served with creamy sauces or with spicy food such as curry.

The climate of the central zone is Mediterranean with a great thermal oscillation between day and night and an average humidity between 55% and 60% and maximum temperatures during the summer above 30 ° C.
Soil and surface
At the foot of the Andes mountain range the soil is silty and of excellent drainage, it is carefully combined with the soils located in the area near the Cordillera de la Costa which are heavier and have a combination of silt and clay.
